Blogger is really acting up.
A couple days ago I was reading Eat Peace, Please's blog and she asked about what to do with leftover basil. I immediately thought of my roasted veggie sandwich with basil mayo. I made a pesto out of roasted sunflower seeds, basil, garlic, miso, lemon juice and olive oil and spread that on one half of the whole wheat baguette, veganaise on the other half, then topped it with roasted red pepper, scallions, eggplant, zucchini that had been marinated in a spicy vinaigrette. The tofu was baked in a diluted soy sauce, garlic, ginger and lime juice bath. The end result was delicious. I have another half of the sandwich for lunch today.

Ahhh, one of life's simple pleasures is grilled vegetables. Then to have them in a sandwich, even better. Yours sounds like something you'd get in a restaurant. Very nice!

ReplyDeleteThat looks so yummy! I should make one of those sometime soon, I have a basil plant that needs trimming. Re: kimchi, you couldn’t pay me to eat that stuff! I usually have an open palate to many kinds of foods (if veg of course), but I hate all things briny, pickley, brackish, and sour. It doesn’t matter what cultural cuisine it comes from, if it’s anywhere near pickley I will hate it. Kind of sucks because people who enjoy pickles seem to be really into them, I wonder what the appeal is about.

MMMMM... that looks wonderful. I'm going to have to try my hand at pesto some day. Have you ever cooked tofu on the grill before. When marinated I really like it that way.
