Cookies, farewell and mooshi *edit with BBQ sauce recipe

Last night, my son had a friend over for dinner. I made a simple fav, angel hair with marinara. I also steamed some green beans and broccoli and made a quick mustard vinaigrette to pour over them.
For dessert, I decided to win one over to the vegan side by making Peanut Butter cookies with chocolate chunks. The recipe is from Vive. Her Peanut Better cookies. I added a bit too much peanut butter, so I used quick oats to bind it. Also, I used around 1/2 cup of chocolate chips, stirred in at the last moment.

OMG, they were sooo good. I made small cookies and actually got 22 cookies from the batch. My son's friend kept raving about how good they were, and he agreed that vegan cookies ROCK MAN!!

As I've mentioned, I need to lose weight.. (funny how I just blogged about cookies.. but I only ate 1.. I'm not a huge sweet fan, fortunately).. so, I've decided to bid farewell to a calorie laden favorite of mine.. Vegenaise. I just like it too much. I will use my remaining vegenaise for my kids and I bought myself some Nayonaise, which I like. When this is done, I will be making my own "mayo".. I would never use Earth Balance on my food like I do Vegenaise... and it's just as fattening.
Here's my first sandwich with Nayonaise. It is full of processed fake meat, which I enjoy about once every two weeks or so.. but it's low in calories. The sandwich was on commerical whole wheat with nayonaise, dijon, lettuce, tomato and pickles.. oh and the "salami".. the entire sandiwch had 330 calories and 20 grams of protein. I ate it for bfast and am not hungry yet and it's 3:30 pm.

For dinner, we are having MooShi Seitan.. I also used a bunch of cilantro in this recipe.. we'll be eating it over brown rice, as it is very brothy.. It's my favorite way to eat it.
This pic really sucks, but food is not always pretty.. I also added a lot of bean sprouts to this recipe because I needed to use them..

My SIL is going to have her baby any day now! She was due yesterday... My neice.. Arwen! I am sooo excited... You will see many pics of this baby.. that's for sure! I can barely think about it without crying... to see my brother hold his daughter for the first time.. omg.. it doesn't get better than that! Since I know what an amazing experience it is to see your child... for the first time.. man... he is going to be sooo overwhlemed and amazed.. It is amazing.
I can't wait to meet her!!

Several of you asked about my BBQ sauce recipe.. I usually throw things together, depending on what I have on hand..

Yesterday's sauce was made from:

1 tbsp canola oil
2 small onions, diced
4 cloves garlic
1 6oz can tomato paste
18 oz water (fill the can 3 times)
dry mustard to taste.. (I don't measure).. but probably at least 3 tbsp
about 2 tbsp molasses (again, to taste)
a tiny bit of Kal Stevia
about 1/4 cup apple cider vinegar
1 capful liquid smoke
Louisiana Hot Sauce to taste
1/2 tsp Marmite (not necessary)
around 2 tbsp Vegan Worcestershire sauce.. (I have a bunch made up from a recipe.. I have to find that recipe again, since I'm almost out)
-basically.. saute the onion and garlic and a pinch of salt in the oil... until nice and fragrant.. then add the tomato paste. Allow it to caramelize for several minutes, then deglaze with the water and vinegar. Add the dry spices and remaining ingredients. Fine tune it to your liking.. this is only an approximation, as I don't measure much.

    I have no idea what your health history is, so tell me to go climb a tree if I'm barking up the wrong path with this suggestion...have you ever considered running a marathon? I lost nearly 20 pounds when I trained for my first half marathon (13 miles). I didn't switch my diet at all, all I did was complete every single one of the training runs!   2. It all looks so amazing. i love veganase too, which is funny cause I have never liked mayo or miracle whip. I have to stop myself from using too much cause, like you said, it's not exactly great for me!

  3. I do love Earth Balance and use that instead of Veganaise.

    I'm with you on needing to lose weight. It's hard because I feel like I've made huge changes in my diet being vegan but the weight is not coming off. Exercise is key but it's harder to exercise when you're carrying 50 or more extra pounds (that's 10 five pound bags of sugar). No sane person would walk around the block carrying 10 bags of sugar! it's a vicious circle!

    I never used mayo when i was a kid since i was allergic (still am) to eggs, so i never have used any of the vegan versions of such. I do have a jar of Nayonaise in my fridge tho, for friends who come over and don't want "dry" sandwiches. I have always used ketchup, BBQ sauce (will have to try yours!!) and/or mustard on sandwiches to keep 'em moist.

  9. Sounds like you are making a commitment to a lower fat diet. I am glad your spirits are up today.

    My sis has been making Dreena cookies with sugar free pancake syrup and stevia (nix the sugar). I tried them andthey are pretty good. The sugar reduct really can cut down the calories.

    I kow exactly what you mean about Veganaise and Earth Balance!! oooh, I have to cut back on both. I use more Earth Balance though, since I rarely eat sandwiches. I will be peeking into your blog and learning from you hhow to cut these out of our diets! Lol!

  11. I am so with you on the Vegenaise. Except, I can't keep it in the house: even if it's supposedly for other people, I will get into it and eat it. I will make excuses to eat it, have sandwiches as snacks in order to eat it. It's really pathetic. My theory is that I was vegan so long that when they came out with something that tasted that much like mayo, my willpower just snapped.

    Anyway, I don't know how you managed to just eat one cookie, but anyone who can do that can definitely keep away from the kids' Vegenaise. You're going to do great! :-)

  15. I'm really loving your large pictures! As usual, your dishes, even if it's just a sandwich, look so good.
    As for the weight situation...I hear ya girl! I never had a problem until I hit about 35. Before that, I could eat anything. Now, I have to watch or pounds slowly creep on. What the heck happened to me?? Got older I guess. Anyhow, with all my back problems, I've been very limited to what I can do for activity. For months, I could bearly even walk. It's much, much better now, but this has been going on for almost a year. In that time, I've gained a lot of weight and don't feel very good about myself. I'm finally able to start walking for a fair distance, so that's a good start. I used to walk before, a lot! It's surprising how much just walking helps. Strap on your headphones with some catchy upbeat tunes, grab a bottle of water and you're off! 1/2 an hour a day and in just a few weeks you'll notice a difference. Now that the weather is cooler, I'm going to start doing that again. I have to! So, good luck to you. It's really hard. I know. I struggle all the time.
    And can't wait to hear about your niece's arrival. And will love to see pictures of course!
