More cheesesteaks.. mac and chees

I haven't been cooking a whole lot. As most of you know, I tend to do big batch type cooking and then eat from that..

Over the last several days, I made a Cajun Red Bean and Okra stew.. it was OK... not perfect... so I was kind of bummed. I didn't take a pic.. It was hot and spicy and full of veggies, so that was good for my "diet".. which I am not thinking of as a diet. I am thinking of it as listening to my body and cutting out excess calories.

For bfast yesterday I had a large salad with romaine, sprouts, red peppers, green peppers, red onions, baby spinach, carrots, avocado, nutritional yeast, homemade low fat ranch, hemp seeds and lots of black pepper. I should have taken a pic because that was my favorite meal of the day.
For lunch, I had a "Philly Cheesesteak" on a whole wheat pita. I sauted shredded seitan, mushrooms, garlic, onions, jalapenos, marmite and a pinch of dried oregano in cooking spray until they were brown and somewhat cripsy, but not burnt. I added a piece of Vegan cheez... this a a new brand in my store.. they come wrapped like tofutti, but dont' have hydrogenated oils. They are OK... they don't melt... but they are very expensive.. something like 3.99 for 8 slices. Rip off it you ask me!

For dinner, we had whole wheat pasta and broccoli with a tofu based "cream" sauce. I used quick oats to add body to the sauce and reduce the cashews. I only used around 1/2 cup of cashews for an entire pound of pasta and 1.5 lbs of broccoli. It was quite good and my kids and husband liked it, which is the biggest test.
We also had an arugula salad with very low fat/sugar free sweet/sour creamy dressing and a bit of Hemp seeds.. no pic of the salad though..

I have been trying really hard to listen to my body and stop before I'm full. This has been very eye opening. For instance, yesterday for lunch I used an entire whole wheat pita for my sandiwch, but realized I was totally satisfied eating half of it. I still have half a sandwich, wrapped in the fridge.. which I will probably have for lunch along with a frozen fruit smoothie. Normally, I would have eaten the whole thing.


  1. Ooo tell me more about the mac and 'cheez'. It looks fantastically creamy - plus I have broccoli waiting to be used.

    & vegan cheese - total rip off. I only buy it on sale.

  2. with food like that, I couldn't stop eating either. The mac and cheeze looks brilliant!

    I like to cook in big batches too. To me, Sundays were invented for batch cooking:-)

  3. OOohh, that pasta looks right up my ally. Pepper steak looks good too, but that "cheeze" doesn’t sound like it was worth it! There's a restaurant in Philly called Gianna's that makes the best soy cheese for their peppersteaks, I wish I had the recipe. Good job on listening to your tummy, I often find myself eating food because it tastes good and not because I’m actually hungry, it’s a hard habit to break.

    I really like what you said, re: "listening to my body" - that's the best thing you can do. I am guilty of not doing it but hope to be more centered and smart-minded to do that...

    Too many veg products are so expensive. It bums me out!

  5. That mac and cheez looks great and the salad with no picture sounds fresh and tasty!

    Maybe this weekend I will mess around with duplicating my favorite veg cheese that they make up in Maine.

  6. Good for you -- you're making big steps at improving your weight.

    Your homemade "cheese" always looks good and probably tastes better (and is cheaper) than what you can buy in the store.

  7. The mac and cheez looks and sounds delicious. You are so creative. I still cannot get over the fact that your husband eats out as much as he does. If I was your husband, I'd never want to leave the house. I'd want to stay home all day in a Melo food coma!

  8. Wow, it all looks so good! I love the mac & cheese idea with the arugula salad on the side!

    Good job on being more aware of when you are truly "full" and trying to figure out your portion sizes. I'm still stuck on that one. Lol! Congrats to you, though, for becoming more aware of what you need and want and for tuning in that way!! I think you're doing great!

  10. Melody - that mac looks great! My favorite dishes (the ones I'm most proudest of) are the improv ones. Great job with the oats, broccoli, etc!

  11. Melody, your food looks wonderful. Great work! And I'm cheering you on in your weight management endeavors--I know that is tough. I love to eat, whether I'm hungry or not, so I have to be really careful too. But you're doing a great thing!
