Enchilada Bake and recipe testing..


Enchilada Bake
This is one of my "go to" meals. My family loves it and the leftovers freeze well. I made a quick filling out of veggies, spices and TVP and added a can of drained kidney beans. In a 9 inch pie pan, I used 4 corn tortillas per layer and complimented it all with homemade salsa. the top layer had low fat cheddar cheese covering 3/4 of it. My portion had no cheese. I added 1/4 cup of guacamole to my serving. Much better than cheese in my opinion.

  2. What an easy way to make enchiladas. I'd totally load mine up with guac too. Who needs cheese when you have guac. In fact, who really needs anything but guac. I could live off it. I think when I make this I'll make an extra and freeze it. I just read an article for freezing dishes. It said that if you line the dish with parchment paper (with extra hanging over the sides) beforehand, after the thing is totally frozen, you can pull it out by the parchment paper and then plop it into a ziplock baggie so your pie pan isn't stuck in the freezer for who knows how long. I thought htis idea was just brilliant.

  4. Mmm, that looks so good. I made an enchilada bake once, and I loved it, but I never made it again! I don't know why. I should try again sometime... And yes, GUAC much better than cheese.
