Curried Rutabaga and Cauliflower Soup
I am still feeling under the weather, so spicy foods are a must to help clear the sinues. Yesterday,
Urban Vegan blogged about her Squash Soup and I haven't been able to get that image out of my mind. I have some acorn squash, but I'm saving them for a recipe I'm developing later in the week. I really wanted some spicy curried soup, so I decided to go with rutabaga and cauliflower. I jazzed it up with serrano chiles, ginger, hot curry paste, garlic,cilantro and lime juice. Delicious and just what the doctor ordered. Unfortunately, my batteries were dying and my hands were not steady at all, so my photos today are a bit on the blurry side.
I decided to compliment the soup with some
Lightlife Organic Tempeh Fakin' Bacon Strips. The directions say to fry them up in oil, but I used a spray of cooking spray instead. I was pleasantly surprised by these. They tasted great! My husband and youngest son loved them as well. I stuffed them into pita bread for a BLT. 3 strips contained 100 calories, 4 grams of fiber and 8 grams of protein.

ReplyDeleteLightlife is an old standby of mine. I use their stuff daily. The "bacon" looks really good the way you show it. And i really like that you used some spray in the pan instead of oil. Good job!
