Eggplant "Parmesan", Vegan Chocolate Chip Cookies, Lasagna

Earlier today, I was browsing my favorite blogs and Eden inspired me to revisit Susan's Eggplant Parmesan recipe. I stayed somewhat close to the recipe, but used my own simple marinara, tweaked the tofu/cheese sauce a bit and grilled my eggplant instead of broiling it. Delicious! You must make this. It looks and tastes so incredibly rich, but it is very good for you. Thanks Susan!

I am so excited! I took my old cookie recipe that I used when I had my cookie business and veganized it! It worked perfectly! I made 5 dozen cookies.. and am toying with the idea of beginning my cookie business again. I had fun making them! I put a call into our local health department to find out the legalities. I won't do it if I have to rent a commercial kitchen; it wouldn't make wise business sense, but if I could do it from my home kitchen it would work. I also included my new business card in the photo because I love it! hehe

I like to grill my eggplant and then scatter chopped garlic on it.. the heat cooks the garlic a bit and the end result is delicious.

A very non-vegan lasagna for my brother
I am visiting my brother this weekend, so naturally, I am making a lot of food to take down. I am starting with this lasagna... I also made another lasagna for my family to eat.
Some of you wondered how many I cook for. The answer is 4, but I have two teenaged boys and a husband who does at least 2 hours of exercise a day, so they eat a lot. I am amazed at how much food my boys will eat. The other day, my 15 year old (He's 6 ft tall and 145 lbs) killed off 1/2 lb of pasta with tofu and sauce as an after school snack! My 13 year old also eats a lot. He plays basketball and does yoga, so he's super hungry as well.. I swear, he's grown 4 inches in the last two months. It's shocking how fast these kids grow!

    I'm actually quite petite, wouldn't take up much space and honestly, I don't eat that much- your boys would never even notice little ol' me gobbling down your delicious meals.

    I say start the cookie business & the eggplant parm business, just make sure you ship stuff down to NYC! Oh, wait and don't forget the cookbook business...

    I think the eggplant parmesan is gorgeous, too as well as your lasagna, even if it isn't veg. It's still lovely.

    Your food is always so chock full of good stuff!!

    And as far as i know, kids and food... yours may polish off quite a bit but i've seen it first-hand too! Between my two sisters and their 12 kids, i can't believe the amount of food my sisters have had to buy and all the meals they've had to cook. It's draining to me to even think of it!

  6. Oooh, if you get your cookie business running, will you do mail-order?! Your business card is very pretty. Oh, and the eggplant parm... I don't remember the last time I had anything resembling it- now I want it so bad!

  8. Oh, I wish I could learn to like eggplant but I just can't, as good as yours looks. I know Susan's food is always great. Maybe I should give it one more try!

    I'm glad your veganized cookie recipe worked. The cookies do look perfect. I'm probably too impatient to work at veganizing, but sometimes I get lucky and that's always fun. Your business cards are GREAT!

    I didn't get to comment on the post below, but that food looks awesome! The enchiladas are so creative and the falafel plate is beautiful.

  9. That business card is GREAT, Melody! I hope you can cater from your home... Maybe I can convince my mom to order me some vegan meals from you the next time I visit NH... The eggplant "parmesan" and cookies would be at the top of my wishlist! You always manage to take such beautiful photos of the food :-)

  10. Your posts always make me so hungry! You should definitely start a cookie business. You're one smart cookie and a great baker, as we all know.

    I would order some of yuor cookies immediately--sure beats licking the screen.

    Oh--and to answer your question, ou can buy Hot & Sour Paste at any well-stocked Asian grocery store.

  12. As always, your food looks terrific. I've tried Susan's eggplant and it's great. I have a friend that has a food business out of her home and it wasn't too difficult for her to get licensed (but it may differ state-to-state). I'm sure your cookie business would do great.

    It's interesting to see just how permeant virtual memory has become in our every day lives. It's like everytime I turn my head, I see something with a card slot or USB port . I guess it makes sense though, considering how inexpensive memory has become lately...

    Ahhh, I shouldn't be moaning and groaning. I can't get by a day without using my R4 / R4i!
