The soup that keeps on giving, baby bok choy, Trader Joes Mango Chili Vinegar

I was puttering around my kitchen trying to come up with something for dinner, when I got a craving for mattar paneer. I had two cups of my curried rutabaga and cauliflower soup left, so I decided to use it as a base for the dish. I do this with leftover dal, and figured this would work just as well. I fried up the tofu in my cast iron sprayed with cooking spray, then fried up the onions and a poblano chile (again with cooking spray), then added some canned tomatoes, 2/3 cup of lite coconut milk, more spices, cilantro, peas and topped it with a tiny bit of shredded unsweetened coconut. It was delicious. I adore leftovers. I chose to eat mine sans rice, because I used the lite coconut milk, but served it over brown basmati rice for the rest of the family. We of course, passed the siracha around the table.


Steamed Baby Bok Choy with Mango Chili Vinegar

I LOVE Trader Joes, but the closest store is around an hour away. I made the trip on Sunday and found some fabulous new products! If you love vinegar with a hint of spice and a lot of mango, you HAVE to try this. I want to kiss whoever came up with this lovely combo. It tastes so rich, but it's not. For a mere 15 calories per tablespoon, this is an easy way to sex up your food, you can't beat it!

    I only had paneer once.. I don't really remember it. . But I do LOVE Indian food!
    Oh how I wished I lived anywhere near a trader joes.. we ALAWYS hit one on vacation. That mango chili would be a big hit in our house!

  3. OMG! Melody, I wish you'd tested this product last week! The TJ's closest to me is around 40 minutes away, but can be close to an hour with traffic I'll definitely have to test that out...I always walk past the oils and vinegars but never want to test it out. Thanks for taking the plunge for us!

    Your tofu paneer looks SO much better than the actual paneer I tried once, and was not a fan of.

  8. You convinced me to try the mango chili vinegar, I will never roast vegetables without it again (ok, I might be going slightly exaggerating there). But seriously, it's good. I'm going to try and formulate the perfect salad to put it on. Maybe something involving cashews and mandarin oranges...

    aren't trader joe's sauces the best? i always over buy---it's not like I'm starving, but I come home with way more stuff than the two of us need.

    We actually have a Trader Joe's just over an hour away now, and we're making the trip one day this week. I'll have to look for that vinegar--who can say no to mango?

    Your colourful tofu paneer looks really really beautiful. I mean aesthetically pleasing... and no doubt mouth watering!

    When i go to my fave veg restaurant, SIPZ, they put bok choy in a few of my fave dishes... It's such a cool veggie... i mean, if veggies can be "cool." This is really attractive, what you did.
