Spinach and Sausage Calzones, BBQ Chick'n Pizza, Funky Breakfast, Lightlife Review

More Lightlife reviews.. I used the rest of the Gimme Lean Sausage to create a filling for this calzone. VwaV inspired tofu-basil ricotta, spinach and 11 oz of the sausage made enough filling for 12 small calzones. First of all, I am not a fan of meat, so maybe this was just too meaty for me. The texture just sat in my mouth and grossed be out. My family, on the other hand, LOVED it. When I used sausage the other day in my stuffed squash I only used a small amount and I also broke it up very well, so it was more like small TVP granules. I actually didn't even finish my calzone, but that's OK, because we have tons of leftovers for my kids to grab for breakfast!

The other day, Vanessa blogged about BBQ "Chicken" Pizza and that reminded me that my husband used to eat this all the time with his gaming buddies during college. (You don't even want to imagine what their dorm rooms would smell like after a 24 hour D&D session!).. but I digress. I had some Lightlife Chik'N Smart Strips and some homemade BBQ sauce sitting in the fridge and I had already planned on calzones for dinner, so I rinsed them off (someone here blogged about them being salty I think) and fried them up with an onion in my cast iron, then added the BBQ sauce. My husband came downstairs during this time and grabbed a bit out of the pan and literally did a double take! He was very impressed and said that he thought it was chicken. I took a bit of the Chik'n before I put it on the pizza and thought it was OK. Not really my thing, but I can see how people would really love it if they were missing the real thing. My oldest son and husand really enjoyed their pizzas, and some of our local neighbor kids had a couple bites and were very impressed. One of them said the Chik'n tasted like honey ham. (It was covered in BBQ sauce)




For breakfast today, I was craving something spicy and healthy, so I came up with this delicious savory pancake. I used some leftover curried rutabaga and cauliflower soup and mixed it with chickpea flour and fried it up with some cooking spray in my trusty cast iron. I decided to stuff it with a simple salad and dress it with my nonfat cranberry-dijon vinaigrette. It is topped with tofu/garlic sour cream. I was a little curious if the flavors would compliment each other, or if they would be a hideous disaster. I was pleasantly surprised. Delicious and so filling that I only had a smoothie for lunch.

  1. Melody, your photos are beautiful! I’m not in to things that taste really meaty either, but that calzone and pizza just look so good! I love that you made a savoury pancake from soup…you are so creative!! And it’s so colourful and healthy looking too!

  3. I'm not a faux meat fan either, but I do want to try the chik'n strips. Your pizza looks really good! And I love your savory pancake idea. That would be a great lunch as well.

  4. Excellent! Glad to hear that the hubby enjoyed the pizza. I think my sister is making this today for her husband, although I think they decided to use real chicken. Oh well!

  6. I would never in a million years think to fix up a pancake like that, but it looks delicious!

    The pizza and calzones are right up my alley. I really like some of the Tofurky products, so you could say I'm a faux meat fan. Maybe I'll have to give that chick'n a try.

  7. Melody, everything looks fantastic. My hubby would love the pizza too! I have picked up the sausage to buy it, even put it in my cart, and before checking it out put it back. Everyone is raving about it, but it freaks me out a bit. Maybe in stuffed peppers with a tiny bit of sausage and a ton of rice. You are so creative in your meals. I so wish I could get my act in gear and make something up. Keep the good food coming! I love calzones!

    That pancake looks perfect- how delicious! Reminds me a little of those indian crepes filled with savory spiced potatoes...yours just looks super tasty and really healthy.

  10. I made calzones today, too! I don't particularly like meat-like things, either, but when I was counting calories and not vegan but eating less meat, I did like meatless things that Morningstar Farms made.

  14. I'm not a big fan of faux meats either -- everything has a little after-taste but that calzone looks beautiful. Everything you make is so creative.
