I was thinking of things to do with the Lightlife Gimme Lean and came up with this recipe while trying to sleep. Sometimes, insomnia can be a good thing! This baby can be done in 30 minutes. I used my convection toaster oven to roast the squash and had enough time to make this simple filling and cranberry relish. The filling was made from a tiny bit of earth balance, bulgur, veggies, spices and of course, the Gimme Lean. I browned the Gimme Lean in my cast iron while the stuffing mixture cooked. I had some leftover cranberries, so I made a quick fat free cranberry/dijon vinaigrette which turned out surprisingly well, so I served this for lunch along with a spinach/carrot and toasted squash seed salad. The entire lunch only had 8 WW points. Verdict: Delicious! The Lightlife prodcuts certainly fit the bill when it comes to calories and fat!
I was a little freaked out by the Gimme Lean because it was so meatlike, but will definitely buy it in the future. I am already thinking of other great uses for it. I only used 3 oz for the stuffing, so I have 11oz left, so you'll be seeing more of within the next several days I suspect.
I had two halves of the squash left that I was saving to test my Tex Mex Black Bean and Quinoa Hash in, but my son decided that they were too delicious to resist! How can you say no to a 15 year old who craves squash?

I really like the Gimme Lean sausage. I made a ton of vegan biscuits and gravy with it last month and it even impressed my very skeptical friends. Your squash sounds lovely - and so fantastically quick!
