'Turkey' results, brunch, piccata of sorts, salad

I swear, I am the worst insomniac. After forcing myself to stay in bed for hours, I got up around 5am and puttered around. What I should do is start taking my dog for her long walk in the early mornings. I decided to make a nice breakfast for the boys and husband. I made the sausage patties out of TVP, oats, spices and flaxmeal and some disgustingly unhealthy biscuits complete with white flour and *gasp* shortening. It was the earth balance stuff, so I guess it's not as bad as crisco, but I think this is the first time I've ever cooked with any type of shortening. I've had it in the fridge forever and was afraid to use it. I did NOT eat the biscuits, in fact, I didn't even eat the brunch. I am just a bit grossed out from all of the heavy type of food I've had this week. I swear, this blog should have been re-named the Seitan and Pasta blog.... but I digress, back to brunch. The tofu scramle was super simple with spinach, onion, garlic, green peppers, spices, soy sauce and pepper, topped with salsa. Unfortunately, I added too much soy sauce so I stirred in some leftover rice to tame it a bit. The smoothie was AWESOME. I did have a nice big glass and felt good about it too. It contained silken tofu, frozen mango, frozen banana, pineapple, coconut extract, almond extract and stevia.. oh and ice. The Vita-Mix smoothed it to perfection. Healthy, delicious and only 3 points per 16 oz. None of the boys, husband included, got out of bed until around 11am! I, of course, fixed a plate just to take a picture. I think I'm addicted to this blogging thing. I ate the honey dew melon and drank the smoothie. Honeydew has a lot of WW points, which irritates me. Like 3 for those two slices. (I weighed it for those wondering how I calculated that many points)

I was craving some live enzymes, so had this awesome salad for lunch. Baby arugula, carrots, some of the red cabbage from yesterday, sprouts and a pear were complimented by 1/4 cup of homemade hummus instead of dressing. 5 points for this HUGE salad.

The seitan "turkey" breast turned out pretty well. It needs just a tiny bit of tweaking and I need to figure out a way to slice it super thin. My cheap mandoline is not cutting it. Literally. I cut about 1/4 of it into these thick slabs for a piccata like dish I made last night. It was pretty good, but I KNOW my cutlets would be 100 times better. This is more like lunchmeat type turkey. In fact, Mark said it reminded him of the Lightlife fake turkey slices, which was exactly what I was going for.

This was an improvised dish, that really wasn't a picatta because I used mushrooms and mustard and tarragon, but it was good. I only had a bite, because it's actually in the freezer right now for another meal.

  1. I feel the same way about shortening. That's why I don't make layer cakes very often - the thought of eating shortening and butter is just too gross, even if it is chocolate!

    Your scramble and salads look totally healthy and delish. I love the picture of the sprouts in progress.

    I somehow missed the post below. Buffalo Seitan looks wow!

  2. I have used an actual meat slicer given to me by a friend to slice various seitans. It gets the sliced deli style thin which I like. In the summer I often cook a roast, slice it and leave it hang out in the freezer in portions waiting to be made into a fast sandwich. Dave and the kids really like this kind of thing.

    I have never made a biscuit like that. My son has though and he was pretty good at it.

  3. Awww, sprout babies. They're always so cute when they're still young and they grow up so fast!

    Love the improvised picatta (and the salad + hummus looks fabulous). I love to eat pickled vegetables with hummus -- it's one of those flavour combinations for me, I guess.

  4. The smoothie sounds so yummy and refreshing. The salad looks so good. I've never seen hummus used as a salad dressing replacement before. How neat.

  5. Everything looks so good! (Including the biscuit... (blush). I was going to say I have no problem with shortening, as long as it's vegetable and non-hydrogenated, but then I realized I have had the same tub of Spectrum shortening sitting in my pantry for a year and a half! So I guess I'm not too into shortening, either!

    Oh, wow, that seitan does look like turkey breast. I want some! And, I haven't sprouted in so long- I should make a move on that.

    Oh, as for Vegan Family Favorites, my recipes are the braised collard greens, the quinoa salad, and one other thing. Maybe a couscous salad? I can't remember! Your good stir-fry sounds excellent!

    I always use hummus as a salad "dressing" too! It is so good! Glad to see I am not the only one...

    Your turkey seitan looks surprisingly "real"! I am excited to test out your seitan recipes once you get them finalized!


  8. The first time I bought shortening was to make frosting and that’s all I’ve ever used it for. Even if it is vegan it looks really gross. I love your salad… it just looks so healthy! And your seitan “turkey” is so real looking!!

  11. sorry to hear about the lack of sleep - my friend is going through the same thing. i just got her some lavendar aromatherapy that i really hope will work - you spray it on the pillow at night & it's supposed to make you purr. i need some of that salad asap! :o)

    I only use nonhydrogenated shortening when I do use it but usually it's only for frosting!

  14. I can see your sprouting worked well. I hear there are some pretty good spelt biscuits in the Vegan Lunch Box. I'm a huge fan of seitan! Yum!

  15. What a nice mom/wife you are, Mel. That's so cool of you to make yer loved ones a nice breakfast.

    I don't mind shortening in small doses where it's necessary, but overdoing fats is never a good thing! Overdoing ANYthing is not a great idea. Like i'm telling you something you don't know! What you made, especially that smoothie, sounds sooooooooo good!

    And as for seitan & pasta, i'm a lover of 'em, especially together!!

  17. I know what you mean about honeydew being high in points. So is mango, 2 points per cup where most fruit is 1 point per cup. That's why I follow the Core program and not the Flex program, because then I can just eat all the fruits and veggies that I want. If I do Flex, I eat less healthy food, because it 'costs' points, so I may not have mango, or butternut squash. Maybe you should try Core, it seems like you pretty much eat that way anyway.
