The last of the white bread to grace my house for a while. I had a couple pieces of my homemade bread from the holiday dinner as well as about a cup of the Chipotle Split Pea soup. I turned the soup into fabulous veggies burgers.. which were awesome on the toasted bread. I got 4 burgers out of that cup of soup. Awesome! I served them with habanero strawberry ketchup.
I hope that all of you dear bloggers have a wonderful and safe New Years Eve and that this new year is your best yet!
I am excited about the new year and know that it will be a time of growth and change for me and my family.
I am super serious about losing this excess weight this year. I have come a long way and kept a good portion off, but I'm ready to lose the rest. I can't wait to blog for healthy and delicious vegan food!

Looks like you had a happy and delicious holiday at your apartment! Your little niece has grown so much, what a beautiful girl. I am sick of eating like garbage and am happy to be back to eating normal today. I've been traveling and eating with family, so eating dairy a lot in the last week, yuck! Next year I might just put my foot down and go vegan all the way, I’ve got to stop worrying about making my diet easy and acceptable for other people. Best to you for a happy and healthy 2008!

ReplyDeleteI also love to eat plain yogurt with cranberry sauce and high fiber cereal (or granola). It's a yummy way to start the day. I haven't tried using stevia in cranberry sauce, but I bet that it saves a ton of calories.

ReplyDeleteEverything looks great! Your breakfast sounds mouth watering. I love that you make burgers out of left over soup--what do you use to help bind them together? I have quite a bit of left over split-pea soup sitting in my fridge at the moment, and I am loving the idea of burgers!

ReplyDeleteI used whole wheat breadcrumbs and whole oats to bind the burgers. Mix them up and let them settle in the fridge for several hours, then form into patties and dry fry in a cast iron. If it falls apart, add more breadcrumbs (or oats, but the oats need some "soaking time" because they soak up the liquid)..
