I adore borscht. It is such a fabulous cold weather soup. Hot off the fire, with roasted garlic tofu sour 'cream', it hits the spot on a cold winters day... and it is cold and snowy and I'm sick.
Having a pot of soup on the stove is sometimes the best medicine.
These lemons have seen better days, but I was determined to use them. Honestly, I have been throwing food out. I hate that. I am learning the whole cooking for one. In the past week, I have thrown out 1/2 container of mushrooms, homemade 'cheese', half a loaf of bread, scallions and garlic. How sad is that? I will figure this out.
I eat salad almost daily, even though it's winter. I decided to utilize my lemons in a very low fat flax lemon vinaigrette. With mustard, garlic, stevia and vegetable broth as a base, the golden flax meal and lemon complimented the flavors and textures well. I will definitely be dressing my organic baby arugula with this mixture when I get more of an appetite back.
Roasting vegetables is my absolute favorite way to prepare them. Here is a simple preparation, only tossed with olive oil, salt and pepper. Cauliflower and whole garlic cloves are charred to perfection. I only used a couple sprays of extra virgin olive oil, so this is very low calorie way maximizing the flavor of simple veggies. Try it with any of your favorite vegetables. You won't be sorry.

    It is definitely tough cooking for one. I have a hard time not being wasteful with two sometimes! It'll get easier though. I wish I had some roasted cauliflower right this moment...

  2. Cooking for one is very hard, and takes a lot of planning. I always keep our bread in the freezer, because between the two of us, a whole loaf won't get eaten before it goes bad. And like you, I hate throwing food out, so I will freeze mostly anything that I can.

  8. Get well soon my friend. I too love roasting veggies. The freezer is my friend. I make various dishes and package them in 1 person servings. This is the only thing that works for me other than eating the same thing everyday for a week. Ya know? I have never had borscht. hmmmm

    ahh, I too have to throw food out too sometimes (mostly fresh produce, since my parents and I can't eat it all in a few days - we need to buy less at once I guess, haha).

    roasted vegetables = perfection. it IS a great method for preparing vegetables!!

    I also hate throwing food out. I used to be the master of food saving/using-it-all-up, but lately, with my crazy work schedule, more and more has been going to waste. Like you, I'm determined to get it right and use it up.

  14. Bread freezes very nicely. Just take out the slices you need each day and they thaw out fast. Lemons can be frozen whole also, then thawed and you can use the juice. Buy 1 at a time and freeze half.
