Huge amount of food porn!

Sorry for the absence. Life gets in the way of blogging sometimes. My new job is going well as are my cooking classes, so I've been really busy this last week. I am so in love with this sandwich. It is a super deluxe reuben.. I made some cashew cheese which added a great dimension to the sandwich and complimented the baby beet greens and tomato.
The cast iron pan does everything! I went very light on the corned beef seitan because I'm still not a huge fan of anything seitan.
Lower calorie thousand islandish dressing tied it all together.
I've been drinking a quart of green smoothie a day. My mom has been staying with me (she moved here from CA recently), so I made her one as well. My favorite smoothie is 3 c water, 1 frozen banana, 1 c frozen strawberries, 2 c spinach, lemon juice, stevia, ginger, cinnamon and 1 T flax meal. It is divine. I find my appetite has lessened a lot at dinner time when I drink it around an hour before the meal. I think my weight loss has come to a standstill because I have not been doing what I need to be, so I am back at it again. I will not give up! It's all about the journey and sometimes it's one step forward, two steps back. I weigh in April 1st and I don't think I've lost much the last two weeks.

Even though this looks rich, it's actually pretty good for you. I baked the tortilla chips and topped it with a black bean, mushroom and yellow squash mixture. Cashew cheese melted nicely over the top and I added 1/4 of an avocado to my portion.
Simple quesadilla on a whole wheat tortilla.. beet greens, cashew cheese and homemade salsa..
.. and of course, lots of soup. This was a delicious, low calorie/fat "creamy" broccoli "cheddar".. topped with some croutons and cayenne it was a spicy bowl of deliciousness for very few calories. My mom said it was too garlicky, but what does she know? hehe

Minestrone... I stirred some pesto in before I ate it, but it was an afterthought. I am going to check out all of your blogs... I have barely been online for days!

  3. Your food looks great, as always. I think the key to dieting is to keep moving forward no matter what the scale says. I've been really inspired by you to get my weight under control too.

    Lovely pics and food! I wanted to ask two things and share one.

    Q1: what size is that cast iron pan? (I'm on the hunt for one now, and want to maximize the usefullness of one, without having to buy many).

    Q2: Do you have a favorite recipe for cashew cheese you could share? Pretty please?

    Share: Your weight-loss attitude is great. I lost 40lbs on WW two years ago, and it was a long battle of ups and downs - but totally worth it! Keep up the good spirits and you'll see overall results: you know that it's a baby-steps process, so don't worry about each weigh-in but look at the big picture!

    Good luck and thanks for the smoothie recipe. I"m going to try it this week!

  10. Hi, was missing you! I love everything. I am glad your corned beef seitan turned out. Mine was a disaster. I really should do the smoothie thing when I come home from work. It really sounds good. I made cream of broccoli soup a couple weeks ago and it was hit with Brandie and my mom. Even DH tasted it and said, "tastes like broccoli" Cute for him because he really dislikes cooked broccoli.

    Is your cashew cheese recipe something you can share?

    I am glad your job is going well. I am sorry you are so far away. It is super that your mom is closer.

    LOL at the food porn comment. I was thinking..."What"? Your mother is lucky to be eating some of your delicious looking meals. I also think it's great that you get to try all of those vegetarian products. Can you believe that I had to stock up on veggies and beans and nuts today so I could start my dog's vegetarian diet on Monday? I also think it's funny that my vet has him on a veggie diet. I might need some suggestions from you on how to store or the shelf life of the food.
