I've been very enthralled by birds lately......
Also, work has been going great. I've been cooking up a vegan storm at the Blue Moon Cafe in Exeter, NH. Jerk Tempeh and Seitan 'Sausage', Kale, Onions, Roasted Garlic and Sundried tomatoes are on the menu for tomorrow, along with vegan Eggplant 'Parmesan'.. and Thai Spicy Noodles and Tofu.... It has been so much fun cooking vegan food! I hope that I can find the time this week to start the Blue Moon Blog..... complete with daily specials and soups....
Yum! That pasta looks great. I've never had sugar snap peas in pasta before.

ReplyDeleteOo I didn't realize you were in Exeter. My college roommate lives there and we definitely went to a cute little cafe when I visited her once... except I think it was called the green bean, not blue moon. Hm. Now I'll have to ask her. I like the pasta veggie combo - lots of veggies!

ReplyDeleteI can totally relate to the cereal for dinner. I think it's a chef "thing". I used to come home from cheffing all day, and all I would want to eat for dinner was a big bowl of cereal or oatmeal. Too funny.
That doesn't look boring at all! I love snap peas!

ReplyDeleteYou don't even know how good your evening sounds - Cereal, blueberries, and soymilk = heaven. I love how if you use froze blueberries they get coated in frozen soy milk. Its like ice cream!

Before I went vegan, pretty much all I ate was cereal!! It's definitely easy when you don't feel like cooking.

ReplyDeleteI occasionally get into a food rut. This week, for some reason, 3 dyas I had the same lunch: a sandwich of rice pepper jack vegan slices (freebies) with veganaisse and lettuce on spelt bread. I must have needed whatever was in it, b/c it tasted so good each time!
Since I generally have the same thing for lunch 5 days in a row, I can't agree that your food is boring!
