$3.33 a day: Raw

Sorry I haven't posted for so long. I appreciate the emails asking if I am OK! I am OK. We've had a very stressful week. My youngest son (15) has to have surgery on his foot which really sucks because he runs track and qualified for state. Then on Thursday, he passed out at school and hit his head hard and had to goto the ER. He's OK, but it was scary.

I also started my new job this week. We had our pre-opening party Friday which went really well and we are officially open for business on Wednesday!

I've been eating a lot of raw food and eating out of my freezer. I haven't been taking a lot of pics though. The above food was a delicious wasabi daikon and cabbage slaw. I just can't get enough daikon.

Lower Fat Raw Eggless Salad on a Raw Corn Tortilla

I LOVE this and have been eating it almost everyday. It is made with mostly cauliflower and is so yummy!

Raw Eggless Salad

3 c cauliflower, pulsed in food processor
½ c sunflower seeds soaked for 4 hours, drained then pulsed in food processor
1 c diced celery
1 c shredded carrots
½ c scallions or 2 T diced red onion or shallot
½ c nutritional yeast
2 t dried sage
1 T dried dill
1 T dried parsley
½ t garlic powder
¼ t turmeric
4 T tahini
4 T yellow mustard
2 T Dijon mustard
4 T relish
1 T chia seeds
1 t black salt (or sea salt)
½ -1 t black pepper
½ c water

Pulse the cauliflower in processor and set aside in large mixing bowl. Pulse the sunflower seeds, and add to the cauliflower. Add the celery, carrots and scallions and nutritional
yeast and spices (not the salt or pepper).

In a small bowl add the tahini, mustard, relish, chia seeds, salt and pepper along with ½ c water. Whisk well and pour over the veggies. Taste and adjust seasonings. Allow
mixture to chill for an hour before serving.

This actually keeps for around 3 days and does not get watery because of the chia seeds.

The corn tortilla is a recipe I'm still playing around with. It's ALMOST to my liking. I don't like most raw breads or crackers very much. I feel like they get a strange taste from the dehydrator. The first bite or two are fine, but then they start tasting kind of gross to me. Am I the only one who feels this way?

God, I am just IN LOVE with grapefruit.

On Monday, I did a mini fast like thing. I drank 2 quarts of green juice and ate only fruit and veggies (with NO SALT ADDED AT ALL). I am going to try to do this once a week.

Hope everyone is having a good week! I'll try to visit your blogs!

  1. oh my, your son! I hope he'll be okay from this point on, and wish you lots of happy times as a welcome change.

  2. Sorry about your son, regarding the foot, my son last year couldn't run in his track finals due to miniscus surgery.bummer! Do you know why he passed out? I hope it is nothing serious.
On a lighter note, your food looks amazing as usual.

  3. How scary about your son! Hope all gets straightened out soon.. and congrats on the opening, on a brighter note!

  4. So sorry about your son!

Congrats on the job and all the yummy raw meals! That eggless salad sounds great, I am always looking for low fat raw recipes. They are hard to come by! You should make a low fat raw cookbook, I bet it'll be the only one out there!

  5. Oh! I'm so sorry about your son, how scary! Hope he feels better soon.

As always, it's so worth it waiting for your new post. Your food looks so amazing. The eggless salad sounds so good. I've to give it a try soon, thanks for the recipe. =D

  6. So sorry to hear about your son! Glad it's better now.

And congrats on the new job--yay! Your raw eggless salad sounds delicious--just the type of thing I'd love, too.

Looking forward to hearing more about the job!

  7. i'm glad your son is okay, but i'm sorry he had all that craziness going on - that's super scary and overwhelming! i'm sending happyfaced vibes your way - and hugs, too!

hooray for starting your new job, and thanks for the raw eggless salad recipe - it looks amazing & i cannot wait to try it, Melody! thank you! :) i just got a dehydrator and will hopefully start making raw crackers & such soon - i will fo 'sho let you know if they have a funny taste. grapefruit is so goooood, and hooray for lots of tasty green juice! i just got a juicer and i've been loving green yumminesses, too! superw00t!

  8. What a stressful week! Glad to hear everyone is OK now.

All of your food looks so delicious, but that grapefruit! Makes me want to reach into the computer and take a big, juicy bite!

  9. If the cooking thing doesn't work out, I think you should move into food photography. I don't even *like* grapefruit and that photo makes my mouth water!

  10. Hey, glad to hear everything is okay! Your raw creations look great. I hear ya on the crackers and breads; I think it's not enough vegetables and herbs and too much flax and spices (which are irritating if you abstain from a while; you may notice if you continue the juicing and only fruits and vegetables that spices make your poop stinks!). I find it hard to eat crackers and breads by themselves; I have to have lots of veggies to add moisture.

    Hope all is well!

  11. woah, congrats on the job!!! i guessed i missed that tidbit.

as always, awesome food. i love daikon and grapefruit too!

  12. Your son must be soooo disappointed about missing the state track meet!! Hope he is doing better and things have settled down for you.

Yay for the opening!! Your food is always so bright and coloful... it instantly put me in a good mood!

  13. That egg salad looks a lot better than the kind I make. Thanks for the recipe! And yes, grapefruit is king of the citrus fruits.

  14. Mmmmmm, i TOTALLY am missing green lemonade. I'm not allowed to eat raw food yet (soon) and i think that will be the VERY FIRST thing i make when i can eat raw again. Yum! Thanks for posting the recipe for the Eggless Salad. It sounds really good.

Hope your son is feeling better!

  15. I hope that your son has a quick recovery. How scary!

  19. RAW-some, Mel!

THe color of those grapefruits is insanely intense. I love them, too, but only the pink ones. We also drink pink grapefruit juice like crazy.
