Split pea and Veggie Fried Rice
I have never been a traditional breakfast person. Eggs never appealed to me. Sweetly sick cereals and pancakes covered in syrup turned my stomach, so I developed a habit of eating leftovers.
This morning I had cooked brown rice and split pea soup, so I sauted a zucchini , onion, garlic along with 1/2 cup cold rice and 1/2 cup split pea soup. I topped it with 1 tsp toasted sesame seeds. Of course, I doused it in siracha because I'm crazy addicted to spice
This totally hit the spot and provided me with a powerhouse of nutrition.
I am feeling somewhat burnt out by cooking right now.. so the next several days will be full of simple food.

Savory breakfasts are a nice change of pace. Sometimes I do savory steel-cut oats, with soy sauce, scallions, and sesame seeds.

I know you will be so surprised to hear it, given the name of my blog, but I liked miso soup for breakfast. I add diced tofu and wakame for extra nutrition and tastiness. I never get bored of it and it's the only thing I'm always happy to eat in the morning. I can see kimchi wrapped in nori for breakfast though--that sounds great!

ReplyDeleteI eat leftovers for breakfast too. But probably the thing that really gets people about my breakfasts is that I often put sauerkraut in my green smoothies.

i'm burned out here too, Melody - i think we all are. ah ha ha! i'm not a sweet breakfast kinda gal either and i was also never one for eggs. ick. your brown rice 'n split pea soup stir fry looks deeelicious - i love this idea and might have to give it a whirl. breakfasts i usually enjoy: salads with chickpeas, collard wraps, polenta, and hummus sammies. :)
ReplyDeleteI definitely have a sweet tooth in the morning, and love my toast. However, every once in a while, I dive into a big bowl of leftover pad Thai for breakfast! :)

ReplyDeleteI love miso soup for breakfast too. I have a sensitive stomach and I have noticed that if I eat something soupy it usually doesn't give me "the pain" that I get with regular breakfast meals. On the weekends though, I love to do breakfast tacos with soyrizo and black beans.
