Naughty and Nice : Gluten Free Brownie Recipe and Pumpkin Pie Oatmeal

I am going to give you my delicious gluten free, vegan and soy free brownie recipe, but be warned, they are incredibly sinful. There are no healthy ingredients in these babies, but they are really good and something you should only eat once in a great while! ( and a great way to win over people skeptical of vegan and gluten free foods )

But first, to redeem myself, here's a recipe for a healthy breakfast. I'm always looking for ways to sneak beans and veggies into food. My son is an athlete and he needs staying power to fuel his long days. I created this pumpkin pie oatmeal recipe just for him. The two strange things about this recipe are that there's no pumpkin involved and I found a way to pack in a 1/2 cup of beans in each serving.

Pumpkin Pie Oatmeal 
2 large or 3 small servings

2 large carrots
1 c cooked white beans
2 c water
Pinch salt
1 1/3 c old fashioned oats
1 t cinnamon
Pinch cardamom
Pinch cloves
1/8 t nutmeg
½  t balsamic vinegar
Sweetener or Stevia to taste ( I use Kal Stevia Powder )
2 t coconut oil

Blend the carrots, white beans and water until totally smooth. Pour into saucepan along with the oats and spices. Heat over medium heat stirring now and then to prevent sticking for around 20 minutes. Stir in the balsamic vinegar and sweetener. Add 1 t coconut oil per serving.

Fiber 17 grams
Protein 16 grams

Now that the nice is out of the way, here's the naughty!

Gluten Free Brownies

1/2 C golden flax meal
1 ¼ c rice milk
2 1/2  c sugar
¾ c cocoa
1 T instant coffee
1 c oil
1 t salt
pinch pepper
2 c Bob's Red Mill All Purpose Baking Mix
1 c chocolate chips
1 t baking powder

Method: Pre-heat oven to 350 ( use an oven thermometer to check temperature  )

In a mixing bowl, add the flax, milk, sugar, cocoa, coffe and oil, salt and pepper. Whisk together really really well. Let mixture sit for 15 minutes or so. Now stir in the GF baking mix, chocolate chips and baking powder. Again, stir really really well. Pour into a greased 9 by 13 baking pan and bake for 30 minutes. Rotate pan halfway through. It is very important to allow the brownies to cool, overnight is best if possible. Cut into 16 squares and enjoy!

  9. Steph, I'm not sure what those vials are like.. but if it's a single serving type thing that would work just fine. When I originally created this recipe, I was using straight coffee in place of the rice milk, but they crumbled a bit, so I added the milk.. but you could always half the milk and use half coffee.

  15. just found your blog, loving it, and LOVING this oatmeal recipe - I'm always looking for ways to cram more protein and MORE fiber into morning oats so I'm actually satisfied. Also, ways to eat legumes in the morning. Beans-in-oats is totally the answer - plus, pumpkin or fake pumpkin pie flavours? Bonus!
