Frugan: Gluten Free Carrot Cake Blondie Bars & simple eats

I am entering these yummy Blondies in the Earth Balance Made Just Right recipe contest. 

I've been a bit burnt out with blogging lately.  My food has been kind of boring!. Basically, I've been eating leftover and soup and soup and more soup and a pasta stewish thing for days... and salad and my healthy banana bread with peanut butter.

My son has been at his dads almost all week, so it's been really simple here. The above dish was just brown rice pasta, white beans and veggies cooked in one pot all together.  I had this for dinner two nights in a row. 

Salad has rounded out my meals. I'm still doing the Mini Meal thing for the first part of the day, but at night I have a bigger meal. It seems to be working. I will weigh myself on the 21st. 

I pressure cooked a pound of pintos last night, so I'm sure some good mexican food is in the future!

What are your favorite ways to eat Pinto Beans? Do you have any recipes you'd like to see using them?

  1. Good luck with the contest. I can relate to the "boring meals" syndrome. Although my meals don't taste boring to me, I don't like to post them because they might seem monotonous to others. However, your meals always look great to me!

  6. i'm gonna have to check out your blondies, Melody! they look amazing and i can't tell you how awesome it is that you make g-f vegan eats for everyone to enjoy. it's so nice to see so many recipes that everyone can gobble up! some days i get a little down be'n gluten-free, and it's posts like these that make me so happyfaced!

    sometimes simple meals are the best, and your brown rice pasta looks great - i'm dig'n the salad, too. i looooove salads, have even been known to eat them for breakfast.

    my favorite thing to do with pinto beans is refried beans - and rancho beans. "hell yeah it's vegan" has the most amazing recipe for "rancho beans" and i use pintos and kidneys for it, make my own bbq sauce, too. it's the yummiest! pintos are my third favorite bean - before them come chickpeas and black-eyed peas, but i really love how versitile pintos are, and i adore their texture and flavor!

    i have my fingers crossed for you!!!

  7. Will have to check out that recipe the carrot cake looks scrumptious.

    I always think refried with pinto beans. A great sauce is a tin of chipotle chilis in adobo sauce blended up as a sauce. Add a little Daiya cheese and a corn tortilla and yum. I'm into easy.
