Frugan : Low Fat Potato Salad and what I've been eating

I just wanted to throw out a quick post today. My stevia post will be coming tomorrow; too much going on today!

Instead, I will share a bit of what I've been eating the last couple of days. I haven't done that for a while.

But first, I created this delicious All American Potato Salad recipe today. I used my Low Fat Vegenaise Alternative and it worked so well!  This would be a delicious side dish served with my All American Veggie Burger!  You can definitely make the special sauce with the my homemade mayo!

Potato Salad

  • 4 c waxy potatoes,  medium chop
  • Salted water to cover by 2 inches
  • ¾ c celery, diced
  • ¼ c onion, minced
  • 2 T pickle juice 
  • 1 T Dijon mustard
  • ¼ t turmeric
  • Very scant ¼ t Black Salt ( or Cajun spice )
  • ½ c mayo 
  • Lots of freshly ground black pepper 
  • Smoked Paprika for garnish


  1. Bring potatoes to a boil in salted water. Start with cold water
  2. When potatoes come to a boil, allow them to cook for 2 minutes, drain well
  3. Place in mixing bowl and add the rest of the ingredients. 
  4. Chill for several hours or overnight
  5. You my need to add a little bit more seasoning  after chilling

You can also use my Chipotle Sauce in place of the mayo for a spicy and ever lower in fat alternative! 

So, onto what I've been eating. 
Raw Creamy Spinach Soup

White Bean Dip

Cayenne, Stevia and Red Pepper Tea
Lentils with Brown Rice Pasta and Veggies
White Bean and Veggie Soup

Simple food. 
I have a pot of French Lentil Soup simmering on the stove and may make some Gluten Free Cornbread if I have enough time later.

  3. did you create the spinach soup recipe? Just curious if it similar to one I have on file with avocado.

    You speak of using a specific type of stevia. I have issues with most stevia and the after taste. Does the brand you have have the aftertaste?

  5. Conscious Cook, I just threw a couple ingredients I had on hand

    4 c spinach
    1 avocado
    as much habanero as you can stand ( I used a whole one cuz I'm nutty like that!)
    1 inch piece ginger
    Braggs to taste
    2 c water

    and I just realized who you were! haha

    I only use KAL powder.. I will write about it and link to where I get it. Stevia doesn't work in many things... I think I have pushed the limits of it.. but I've pretty much figured out how to use it so it doesn't have that horrible taste.

  6. I haven't ever really used stevia -- I've had it in teas, and find it has a strange mouthfeel to it. Do you have any tricks for disguising the mouthfeel/aftertaste? Or is it simply an acquired taste?

  7. Yum to everything. I love the pickle juice in the potato salad. It sounds really good.

  8. I know Chris would love that potato salad, he loves that sort of stuff.

    I have trouble figuring out what to mix stevia with. So far I only like it with fruity things or tart things like in lemonade. Would love to hear more ideas.

  10. What causes the difference in flavor/aftertaste in the different brands of stevia on the market? Also, do you recommend growing your own stevia? How would you use it? (in terms of amount, for instance is one teaspoon of the white powder the same as one teaspoon of the green homegrown powder?) thanks!!!

  11. OMG yum!!!!!!! what would you recommend in place of pickle juice if one does not have pickle's on hand? vinegar?

  12. VKO, try vinegar ( but cut the amount in half )..

  14. Yum! I absolutely love potato salad and anything else with mayo, but I've been curbing my intake in the new year to try and keep it healthier. I like how this recipe doesn't have too much but still has all the flavor.
