Frugan: Orange Scented Coconut Barley Pudding

Do you enjoy rice pudding? I love it! I was puttering around my kitchen yesterday and came up with this healthy stand in. It is a cross between a dessert and breakfast, which is awesome in my opinion!

Now, I wouldn't serve this to company unless they were already familiar with healthy eating. The texture is thickened with Psyllium Husk, which can be a little odd for some, but I really love it. It is such a soothing ingredient and full of fiber and very few calories. If you like tapioca or chia seeds pudding, then you will probably like this.

I started by making Bean Milk out of my white beans. You could use soybeans, rice or oatmeal instead of the white beans. My Banananog would also stand it nicely here. Rice or soymilk will also work, but I like the added nutrition and frugality of using beans.

This bean milk is delicious in smoothies, cooked into oatmeal or anywhere you would use soymilk. It's passable for drinking, but I like to use it as a base.

Bean Milk Base

  • 1 c white beans, cooked very well
  • 4 c water
  • 1 t vanilla extract
  • ½ t rum extract
  • Pinch salt
  • ½ t cinnamon
  • 1/8 t nutmeg
  • 1 frozen banana 

Blend for several minutes. 

Orange Scented Coconut Barley Pudding
  • 3 c bean milk
  • 1 c water
  • 1/2 t orange zest
  • ½ c barley
  • 1 c raisins
  • 1 t cinnamon
  • Stevia or sweetener to taste 
  • ½ c shredded coconut
  • ¼ c psyllium husk
  • 1 c soy yogurt
  • freshly grated nutmeg for garnish
  1. Pressure cook for 10 minutes. Allow pressure to come down naturally.
  2.  Stir in psyllium and let mixture sit for 15 minutes or let cool.
  3. If you don't have a pressure cooker, cook on stove for an hour or until barley is soft then stir in psyllium & yogurt
  4. Cool 
  5. Garnish with freshly grated nutmeg

  1. Love the idea of bean milk, especially in a grain dish to boost and complete the protein! This reminds me of a millet coconut pudding my mom used to make, I should definitely make this. Healthy dessert breakfasts are the best!

  4. psyllium husk, do you know the actual number of digestible carbs that are in that? i have tried looking MANY times and cannot get a good answer. i know some are fiber carbs and they dont "count" but all the rest do?i know tht is a complex carb but id still like to know that info.

    you really push me to want to try new things.

    Aimee, you probably could, but I don't think it would be as good. I think the flax flavor would overpower it. Chia seeds would work though.

    Courtney, I use Trader Joes.. it is in their supplement section I believe.

    DD, according to the package I have 2 T of husk ( I used 4 for the whole recipe ) has 35 calories, 10 grams carbs and 9 grams fiber, so it would come out to 2 g digestable carbs I believe for the 1/4 c in the recipe.

    I'm enjoying getting to know your blog some - found it when a friend posted about it on FaceBook. I am looking forward to trying your bean milk for our granddaughter who has some very severe dietary restrictions. Finding ways for her to get enough protein in her diet is a huge challenge.
