Frugan: Yeasted Gluten Free Flatbread & Keylime Pie Birthday Treat

Yesterday was my birthday and a friend of mine brought over the ingredients to make this delicious pie. I will post the recipe later in the week. We made it together and I have 6 pieces in my freezer. I am going to my brothers this weekend and will take the rest with me then. Wish me luck in not eating any of it between now and then! 


I made some delicious yeasted Gluten Free Flatbread the other day. Gluten free tortillas can be prohibitively expensive and hard to find; making your own alternative is a much better deal and is really simple. If you can make my Chickpea Flatbread, you can make these too! 

Now, these don't have the exact texture of tortillas. They are more like a mixture between a crepe and a tortilla. They are sturdy though and delicious. The yeast gives them wonderful, bready flavor.  I use Bob's Gluten Free All Purpose Baking Mix. I pay $3.59 for 22 oz which is around 5 cups of flour. I calculated the price for these at $4.00/22 oz for simplicity sake; at $.25 each they fit in nicely to my $3.33 a day budget. 

Yeasted Gluten Free Flatbread:
  • 2 c warm water
  • 1 t yeast
  • 2 t sugar
  • 2 T flax meal
  • 1 C Bobs GF Flour
  • 1/4 t salt
Method:
  1. Bloom yeast and sugar in warm water for 5 minutes
  2. Add flax, flour and salt.
  3. Mix well
  4. Let sit covered for at least an hour
  5. Heat a cast iron or non stick skillet to medium heat; spray with oil
  6. Ladle dough into pan, spread with a spoon or pick up the pan and swirl until mixture forms a good sized tortilla
  7. Cook for 5 minutes or until the flatbread starts lifting up from the pan
  8. Flip and cook for 1 minute more
Yield: 4 tortillas

Use them the same way you would use a tortilla!

    It's probably cheaper to get a flour mix than all the individual ones to make one's own I think.
