Italian Chickpeas, Sweet Potatoes and Greens
- 1 sweet potato, cut into small pieces
- 1 c vegetable broth
- 1.5 c chickpeas (cooked)
- 4 c chopped collards
- 1 c roasted garlic marinara
- 1 T balsamic vinegar
- Chili flakes if deired
- Goat Cheese Crumbles or Lemony Almond Pate
- 2 C cooked Rice
- In a 12 inch skillet over high heat add the potatoes, broth and chickpeas. Cover and cook for 15 minutes
- Next, add the marinara, vinegar and rice. Cook for 15 more minutes. Serve with your favorite nut cheese or nutritional yeast flakes
I can't believe it's Feb 1st! We are bracing for yet ANOTHER snow storm. This one is supposed to be the biggest one yet. This winter is really getting to me! I am so glad that yesterday my sons and X moved my treadmill to my apartment. It was no easy feat let me tell you! It's huge and heavy and was in his basement which was snowed in.... but it's here and I'm so so glad! Now I can FINALLY get started on the Couch to 5 K! I actually started it in Dec, but the weather stopped me.
I'm also going to train my dog Jorda to use the treadmill! She is so sensitive to salt and cold weather. She's going totally stir crazy, but when I take her out for a walk she gets too cold and her feet hurt, so she begs to go back home. Does anyone here have any booties they recommend? We have not had lucky with any of them staying on her feet.

What are your thoughts about Wal Mart and food? It's interesting because their prices are generally MORE expensive than Market Basket. Much more.. especially their produce. I can get a HUGE bunch of collards at MB for $2.29. At WM, a much smaller ( and wilted ) bunch was $3.75!
It pays so much to shop around and compare prices.




Well of course I hate Wal-Mart, but sometimes you just can't say no to those prices!

Yes! I agree! On the weekend I'll cook up a couple of types of beans and a couple grains. And I always have greens. Put the three together to reheat and you have a delicious, nutritious meal! I really like your dish combination of chick peas and sweet potatoes. Mmmm.

ReplyDeleteI too am bracing for that snowstorm. Yesterday I thought the snow wasn't happening until this afternoon, but when I woke up this morning, lo & behold it was already pouring down at 6 AM. I really don't know where we are going to put this batch, we are out of room!
I rarely buy anything at Wal-Mart except for Earth Balance, because it was a full $1.50 cheaper than any other store, but they actually raised the price now so I'd only be saving .50, and I don't know if it's worthwhile. Their produce, at least at my Wal-Mart, is nasty, so I don't even have to think about it. I usually get my veggies at Trader Joe's.
I haven't shopped at a wal-mart in years! luckily, there haven't been any walmarts where i've been living. your dish looks lovely, as always!

I don't have a nearby walmart but I have heard they can have good deals and some organics. I started boycotting them and protesting them when they first got big and haven't even shopped in one ever. My cousin works at Walmart (only place that would hire him with a disability) and he doesn't get health care coverage or any benefits, let alone much time off. Rough.
