One of my favorite ways to use pesto is to smear it on my Chickpea Flatbread and add a bunch of veggies and wrap it up. So good and portable!

| Chickpea Flatbread |
2 large cloves garlic
1 t garlic salt
¾ c toasted walnuts
1.5 c packed basil
½ c packed spinach
Pinch white pepper
Pinch nutmeg
2 T nutritional yeast
1 T miso
1 T red wine vinegar
1 T olive oil ( optional )
Method:
- Toast Nuts
- In a food processor add the garlic and salt and process until garlic is almost a paste
- add the rest of the ingredients except the olive oil
- Top with oil if desire

I used to love pesto on pasta...and now put it on salads...sometimes I make it with cilantro or other herbs besides basil leaves, or spinach too. so tasty!

ReplyDeleteHave you ever tried winter pesto? It's definitely worth a go. I use kale, spinach and parsley and it's soo good you wouldn't know there wasn't basil in there.

Wonderful! I've never been a fan of pesto and I think it's because I don't love pine nuts. A walnut version with nutritional yeast sounds fabulous!
