Spaghetti and Meat Balls & Raw Collard Salad


More pasta! I scored some Non-Gmo Corn Pasta (gluten free) for $1.50 a pound at my local Market Basket. I just love that store. I had some of my BeanBalls in the freezer along with Simple Roasted Garlic Marinara in the fridge. The bean balls held up perfectly in the freezer and they soaked up the sauce nicely.

While the pasta is cooking, make a quick salad.. and you have a super tasty meal in 20 minues!


The beanballs are made from my 3 Ingredient Veggie Burger recipe which you should check out!

For lunch, I am defrosting some of my Curried Sweet Potato Soup.. I love my freezer eats!

I am getting so excited about my Cross Country Road Trip! It's starting to come together people! 


I am funding my trip by setting up Cooking Classes and Photo-shoots along the way!

  7. Fiddlesticks, collard is even harder to find in Canberra, Australian than collards! But I do plan to splurge on some uber-expensive kale from teh farmers market soon :)
