Vegan Mac and Cheese!

Simple and comforting, this Mac and Cheese comes together fast if you have staples on hand!

8 oz Dry Pasta of choice (I like brown rice), cooked in salted water


Sauce ingrediets
1 C Cashew Goat cheese
4 oz roasted red pepper (around 1/2 cup) or pimentos
1 c cooked white beans
pinch nutmeg
1/4 c nutritional yeast
2 t dijon
1 cup pasta cooking water
Salt/Pepper to taste
Chipotle Powder or Smoked Paprika for garnish

Blend the sauce ingredients together and heat on stove with the cooked macaroni. Save leftover sauce for other uses.

I'm making a big batch of my New Year's Day Black Eyed Peas in honor of Mardi Gras! I'll be subbing red beans for the peas which I pressure cooked already. I am really loooking forward to a big bowl of this spicy goodness!


Breakfast this morning was oatmeal that I cooked with cinnamon, apples, stevia and white beans pureed with water for the cooking liquid. I love adding beans to my oatmeal for a nutritional boost!  Check out my Pumpkin Pie Oatmeal recipe for instructions on how I do this! 

Finally, I have some really exciting news! I will go into more this week, but this summer, I will be embarking on a CROSS COUNTRY VEGAN ROAD TRIP!!  I am going to drive from New Hampshire to Portland where I will be speaking at Vida Vegan Conference! I plan on checking out the whole country to see if I want to move! Of course, I will blog all about it and will be setting up cooking classes and photoshoots along the way! I am super stoked!

  12. I've actually never made mac 'n' cheese, vegan or not. It's not as common a dish here in Australia! I think I might have to put this recipe near the top of my 'to-make' list to rectify matters :)

  18. I love mac and cheese. I haven't had it in almost a year though, which is how long I have been a vegan. I'm going to have to try this recipe for sure!

    Beans in oatmeal? I've seen several people doing that. I guess I'm going to have to give that a try too. :o)

  19. i love trying out other people's mac 'n cheeze recipes. so awesome, Melody - it looks wonderful and i love that you add in chipotle or smoked paprika - we add both in ours every time. so yum!
