8 oz Dry Pasta of choice (I like brown rice), cooked in salted water
1 C Cashew Goat cheese
4 oz roasted red pepper (around 1/2 cup) or pimentos
1 c cooked white beans
1/4 c nutritional yeast
2 t dijon
1 cup pasta cooking water
Salt/Pepper to taste
Chipotle Powder or Smoked Paprika for garnish
Blend the sauce ingredients together and heat on stove with the cooked macaroni. Save leftover sauce for other uses.

I'm making a big batch of my New Year's Day Black Eyed Peas in honor of Mardi Gras! I'll be subbing red beans for the peas which I pressure cooked already. I am really loooking forward to a big bowl of this spicy goodness!
