Now, I understand it's ridiculous to put seitan on gluten free pizza dough, but I did. (and then I picked a good portion of the seitan off of my pizza)..
The other day, I made some Chipotle Garlic Seitan Sausages. They were a total clean out the fridge deal. For the liquid portion, I used some leftover Very Lowfat Balsamic Vinaigrette and chickpea cooking liquid. I added nutritional yeast, sage, chipolte, tons of garlic, fennel and cajun seasoning to the vital wheat gluten and pressure cooked them for 20 minutes.
I topped my pizza some Tangy White Cheese Sauce (I'm still tweaking this recipe.. ), caramelized onions, sauerkraut, seitan and my special sauce . I did add in some caraway seeds to the special sauce for a more traditional reuben flavor. Yum!

I have been getting a GREAT deal on organic baby spinach. I came into a bunch of $1`off coupons, so I've been paying $3.69 for 10 oz! This salad was dressed with my Creamy Italian using Tofu Feta instead of Cashew Goaty Cheese. I also added some sauerkraut and caramelized onions.
It is SNOWING today... we are supposed to get 10 inches. blehhhhhhh....

ReplyDeleteI zoomed in straight away when I read that title! Sounds like an amazing dish. Anything with sauerkraut is appealing to me, and especially the double whammy of having it on the pizza and the salad too!

10 inches of snow? That's a pretty substantial April Fool's joke. You pressure-cooked the seitan? I've never tried that. Does the result differ much from steamed?
ReplyDeleteOne of my favourite things is a tempeh reuben so I understand your combo (except for the seitan) as I try as much as possible to be gluten free. Sounds yummy though. Ick on the snow. If it's any consulation it's been rain, rain, rain here on the wet coast.
