July 3 Food Shopping

So today's haul:
  • Huge bunch parsley .89
  • Old Fashioned Oats .99
  • 1 lb dry black eyed peas .99
  • 28 oz can tomatoes .99
Total: $3.86

I will be making a batch of my Summer Black Eyed Pea Spread and some New Years Black Eyed Peas.

I cleaned out the fridge today and made a batch of this delicious Carrot Raisin Salad.
  • 3 large carrots, shredded
  • handful or raisins
  • chopped scallions 
  • parsley
  • 1/2 teaspoon cumin seeds
  • 1/2 cup sunflower seeds
  • Very low-fat sesame ginger dressing mixed with chipotle 
I shredded the carrots, toasted the cumin seeds and sunflower seeds and mixed everything together. A touch of lemon pepper finished it nicely.

I am newly vegan (meat once a week or less) b/c of health issues (ibs-c)not b/c of principles (sorry - we run a very small family farm! LOL)... but I once adored cooking and loved being good at it... I've been thrown for a loop lately and discovering your blog has made me excited to be in the kitchen again! You are amazing...

    I need to watch my sugar, too, so banana soft-serve is pretty hairy for me... I found your tofu/soymilk "ice cream idea" - do you have proportion suggestions? I'm willing to wing it, but this all costs money! :-)

  4. Yum....carrot salad looks wonderful. Full of Life Flatbread company that has a restaurant open only on the weekends has a delish carrot salad that's topped off with seaweed with a flaxseed dressing.

    I am on a very restricted budget, and seeing what you can make on pennies a day is very heartening and inspiring. It's not all bland pasta and bread, which I've been guilty of.
