I intentionally made a large amount of brown rice last night so I could use it for leftovers. This morning, I thawed the rest of the edamame I had in the freezer and made this simple, yet very delicious salad. Romaine, purple cabbage, around 1/2 cup of the leftover Lime-Edamame Rice from last night and then an additional 1/2 cup of edamame made this a very filling and nutritious breakfast! I topped it with Sriracha and my Low Fat Sesame Ginger Dressing.
